These muffins are beautifully fluffy, packed with flavor, and have a light caffeine-kick from the matcha! What more could you want for a simple breakfast?

Ingredients
- 3/4 cup all purpose flour
- 1 tablespoon Organic Culinary Matcha
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 overripe bananas
- 3 tablespoons melted butter or coconut oil
- 1/4 cup milk
- 1/3 cup dark brown sugar
- 1 egg
- 1/2 cup chopped maple-glazed walnuts (optional, could switch out for plain walnuts or any other nuts)
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Whisk together the flour, matcha, baking powder, and baking soda in a large bowl.
- Mash the bananas in a small bowl and add the melted butter, egg, milk, and sugar. Mix thoroughly.
- Add the wet ingredients to the dry ingredients and mix together with a spatula.
- Finely chop the walnuts (if using) and add to the batter. Stir in until well-combined.
- Split the batter between 6 muffin cups and baking for 15-20 minutes, checking often in the last 5 minutes. Once they are golden brown and cracked slightly on top, check with a toothpick to make sure they are fully baked and allow to cool on a rack. Enjoy!

This recipe can be easily doubled or modified to suit your preferences with different nuts or chocolate chips!
